Tis the season for get togethers and treats. Last December I saw Ilona Burkot, paediatric registered dietitian, post a story about chocolate bark that she was making and I quickly responded to request the recipe. Well, as life happens, I didn’t have a chance to make it last year. Here we are, the week before Christmas and I am going to do it. I am going to make this with dark chocolate but you can use any chocolate that you prefer!

Melt 300g dark chocolate over double boiler, stirring often.

Once completely smooth, take off heat and stir in 1-2 teaspoons peppermint extract.

Spread over parchment paper-lined cookie sheet (until chocolate is about 1/4 inch thick) and sprinkle with crushed candy cane.

White chocolate drizzle is optional.

Place in freezer for 10 minutes, remove and snap into pieces.

Watch it disappear.
